Saturday, I met up with Ruthie for an early morning run along the West Side highway. I think we did about 5 miles. I realized that I hadn't set my garmin until we were about 1.5 miles in. Opps. Later on Saturday afternoon, we met up with Michelle and Eddie for the Paula Deen show!

Paula was awesome. Exactly like she is on tv. Totally adorable and over-the-top personable. The interview was held inside the Times Center and ran about 1.5 hrs. The last 20 minutes, they let the audience ask Paula a questions. You know I jumped at the chance. When I got up to the mic, my heart was pounding. I don't do well speaking in front of small crowds. Crazy huh?? The convo went something like this:

Me: "Hi Paula."

Paula: "Hi darling."

Me: "My husband and I love your silly salt. We dump it on everything."

Paula: "Isn't it good? I use it on meat, seafood, baked potatoes. It adds so much flavor."

Me: What do you do with all the food after you make it {on your show??}

Paula: "We make 3 versions of whatever I'm baking. The first version is for pictures and camera shots only. The second version is the "after" and the third version is me making the actual dish." After we finish shooting the show, we give the food to a local food bank."

Me: "Nooooo way!". That's great!!

Then I nervously walked away. I LOVE PAULA!! After the interview, we scrambled down stairs to get my cookbook signed.

I'm still freaking out. I was just so over-joyed to meet Paula!

For the record, I've never been to a book signing. Ever. Paula was the first and last. She holds a special place in my <3

So that was my Saturday. Now on to Sunday Funday.

Yesterday I ran a 5K and WON {overall woman.}

WTH? I have no idea how to get my iPhone pic's to rotate upright. This is ghetto, but you get the idea.

All I wanted was that damn metal, and I got it! The goal for this particular race was to set a new pr. My best time so far still sits at 22:19. Yesterday I finished 3.1 in 23:18. While I didn't set a new pr, I did take the #1 spot for women, and honestly, that felt AMAZING. Guess I'll be running another 5K ;0)

After running a ton of errands and basking in my #1-ness, I managed to stay in one place for 25 minutes and throw together our Slow Cooker Sunday meal. We made a "Sweet n Savory" veggie pot, thanks to Hungry-girl.

It was FANTASTIC!!! We ate it with a nice dark whole grain bagette. I had two mongo slices with butter. Hey, I was #1 yesterday. I ran hard for that bread, haha.

Sweet & Spicy Veggie Pot

Ingredients:
2 cups cubed butternut squash (about half a squash)
1 large eggplant, stem removed, peeled, and cubed
1/2 head of cabbage, cored and cut in chunks
1 zucchini, sliced into 1/4-inch coins
1 large onion, chopped
1 cup chopped carrots
One 15-oz. can pure pumpkin
One 6-oz. can tomato paste
1 1/2 tbsp. brown sugar (not packed)
1 tsp. chopped garlic
1/2 tsp. cinnamon
1/2 tsp. salt, or more to taste
1/4 tsp. cayenne pepper, or more to taste
1/4 tsp. ground ginger, or more to taste
1/4 tsp. ground cumin, or more to taste
1/4 tsp. chili powder, or more to taste

Directions:
Place all cut veggies in an extra-large bowl and set aside.

In a medium bowl, combine all other ingredients and thoroughly mix. Spoon this mixture over the veggies and stir to coat.

Transfer mixture to a crock pot with a capacity of four quarts or more. If needed, pack it in tightly. (It will cook down.)

Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours, until veggies are very tender.

Stir well and serve!

MAKES 10 SERVINGS. NOTE, this def DOES NOT serve 10. More like 4.

I think running my little 4 miler this morning made my throat feel even worse today. I sound like a dude! My throat is scratchy and sore, wahhh!!

Okay, I'm done bitching.

Guess where I'm going today? Borders!! Must get this book "How to Live Like a Hot Chick." Jodi and Cerina also penned, "How to Eat Like a Hot Chick," which I read 2 years ago and I LOOOOOOVED.

thyroid city

I suppose I should hold off on buying another book on thyroids until I know for sure what the hell is wrong with me. I can't wait to see the endocrinologist in 2 weeks. My blood work showed that I have low TSH levels-hence a suppressed thyroid. I'm not experiencing any of typical hyper/hypothyroid symptoms. Not one. Part of my night was spent sitting on the floor at Barns & Noble reading about thyroid imbalance.. This sh*t is not only BORING, but very confusing. I give up.

"Hypothyroidism is commonly described as an underactive or sluggish thyroid, but there is more to it than just thyroid activity. Sometimes the problem is thyroid hormone imbalance, primarily underproduction of the thyroid’s main hormone, thyroxine (T4). But T4 also has to be converted into its active form, triiodothyronine (T3), by the liver. It then has to be efficiently utilized by the body. Disruption in any one of these processes can contribute to hypothyroidism symptoms.

Hypothyroidism is usually diagnosed by measuring levels of thyroid stimulating hormone (TSH), which is produced by the pituitary gland. High levels of TSH indicate that the pituitary gland senses insufficient thyroid activity and is attempting to stimulate the thyroid gland. In an effort to coax the thyroid into increasing its activity, more and more TSH is produced.

Unfortunately TSH levels don’t tell the whole story. Abnormally high TSH levels indicate a problem, but they don’t indicate whether the problem is in T4 production, conversion to T3, or in the body’s inability to utilize thyroid hormones efficiently. What’s more, TSH test results sometimes come back “normal” despite an existing thyroid imbalance".

I finally moved it along, and grabbed the last F Factor book that was on the shelf. NICE move. Go me.

Thyroids are annoying to read about. Perhaps I should look into getting an audio book? I couldn't imagine a more boring topic to learn about in audio form. Listening to some dude talk about my messed up thyroid?? No thanks. Forget I even suggested that. I am clearly over-tired, therefore I am going to bed.

fabulous fiber

Apparently, I'm not the only LOVES fiber and finds it fabulous. Tanya Zuckerbrot, a well known, hot little nutritionist here in NY wrote the F-Factor Diet. She says that eating fiber and lean proteins is the key to dropping the lbs. There was a great write up on Tanya and her staff in today's NY POST.

I would love to meet with the Tanster, too bad she charges so much. $4500 gets you six visits with Tanya herself, starting with a one hour consultation, followed by a 90 minute "education" in fiber, then four 30 minute follow ups. Sounds like a bargain to me (I kid). I'll stick with my fiber one bars. I may get this book though-not gonna lie.

so many surprises

First Stu tells me he that he has a contact at Tory Burch and do I want something. Umm, that would be a YES. Then I come home to find 3 boxes sitting on my door step. First are the white hot chocolate k cups I had ordered. YIPPIE!!! The second box was another batch of my favorite sugar-free chocolate chip cookies (must be fully stocked at all times). And lastly, to top things off, "The Runner's Rule Book" came! What an awesome last 30 mns!

This is the first time I've tried the vanilla chocolate chip. I always get the chocolate chocolate chip. Glad I switched things up because the vanilla cc is to die for. So soft and chewy.

Stu renewed my subscription to Runner's magazine for Christmas, and this book came with it. I'm sure all the tips will help me along with my training, as I'm running my first half in April.
